My Favorite Food Hack + My Favorite Green Smoothie
"What kind of health coach doesn't like greens?"
It's true. I don't particularly love greens. I like some of them (okay, just kale), but I kind of really do.. highly dislike the rest. The struggle is real, though, because I understand that they are the single most important thing that I should be eating on a daily basis. Greens are alkalizing, mineralizing, and detoxifying. They provide protein and fiber, and are packed with so many important vitamins and minerals. Greens create that "glow" that everyone craves so much. Simply put, they have it all.
Here's the thing: I don't believe in eating foods that you hate. Fueling our bodies should be a positive, rewarding relationship, and hate has absolutely no place in it. So, what do I do? I hide them.
One of my favorite ways to hide my greens is in juices and smoothies. I combine them with flavors that I love to balance out the bitterness that I don't particularly enjoy. This way I am able to pack them into vibrant, nutrient-rich blends in such high quantities that I only have to drink them once a day. But, I have gotten so creative with my ability to hide them that I actually crave these smoothies. How cool is that?
This smoothie is my favorite for three main reasons:
- It is so easy to make.
- The color is gorgeous.
- It is unbelievably delicious.
If you're like me, you buy greens at the store with every intention of creating the most amazing, nourishing salads throughout the week. But, every time you prepare food, you pass them over. Before you know it, they're wilted, and you have failed. Again.
Not true! Do this: toss them into a high-speed blender (I have done this with kale and spinach many times, I haven't tried other greens yet) with coconut water and blend until liquified. The amount of coconut water will vary based upon how many greens you use, but you shouldn't need more than 2/3 cup. Once blended, pour into ice trays and freeze! Now, you have a solid base for all of your green smoothies that will not go bad! You didn't waste any food, and smoothie-prep doesn't get any easier.
My Favorite Green Smoothie: Citrus Greens
Vegan, Gluten-Free, Paleo // Serves 1-2*
*Fills two of the pictured above 16oz mason jar. Sometimes I drink a giant one as my breakfast, and other times I split it into two smaller jars, one for me and one for my boyfriend.
- 2/3 Cup Coconut Water
- 1/2 Avocado, frozen
- 4-6 Greens Cubes
- 1 Orange
- 1/2 Cucumber
- 1/2 Green Apple
- 1/2 Grapefruit
- 1/2 Lime
- 1-2 tabs Blue-Green Algae (optional, but fantastic addition)
1. Simply blend all ingredients together in a high-speed blender. Add more Greens Cubes or another 1/2 frozen avocado for a thicker consistency or add more coconut water for a thinner consistency.
